Truly Texan Wedge Salad

One large head of iceberg lettuce, washed and cut into quarters (wedges)

One cup of fresh pico de gallo (recipe below)

½ to one cup of blue cheese crumbles

BRIANNAS True Blue Cheese Dressing

Place one chilled lettuce wedge on salad plate and top with BRIANNAS True Blue Cheese dressing. Spoon pico de gallo over all and top with cheese crumbles.

Makes 4 servings. Muy rico!

 

Recipe for PICO DE GALLO:
One cup seeded, diced tomatoes (ripe but firm)

¼ cup diced red onion

1 Tbsp. minced garlic

One diced jalapeno (remove seeds & membrane for milder flavor)

2 Tbsp. chopped cilantro

Juice of one lime

Mix all ingredients together and chill. Keeps in airtight container for 2 days.

Makes about 1½ cups.
